Where the fruit-forward character begins
Hand-picked ripe cherries arrive at the Benti Nenka Processing Site, where flotation and careful visual sorting select the fruit for fermentation. The cherries spend 10–12 days in pressurized, oxygen-free containers, with sugar levels, temperature, and pressure closely monitored.
They then move to raised drying beds for approximately 15–20 days, allowing air to circulate as the cherries dry to their target moisture level. The result is an expressive anaerobic natural coffee with intense tropical fruit sweetness, generous strawberry aromatics, and a distinctive herbal finish.
Pour a cup, let it cool a little, and take your time with the fruit and sweetness. This is a coffee for the curious.
