From the farm
Nestled in the mountains near the town of San Pedro Necta, Finca La Providencia is a stunning example of the beauty, natural resources, and superior coffee that Huehuetenango is known for. Max's 600-acre estate is a beautifully maintained mill launching from a highpoint on the sloped property, where ripe cherries are placed in water and carried through a series of intricate canals designed to take full advantage of gravity.
After 36 hours fermenting in a large tile-covered tank, the coffee is mechanically washed with a demucilager to reduce water contamination, then pushed back into a canal where water and gravity join forces again to drag the coffee through long classification channels that separate out the less dense beans.
In the cup
Fantastic body and sweetness: brown sugar and caramel notes emerge first, followed by cherry tartness, and it rounds out with a pleasant vanilla finish.
