Grown by over 450 smallholder families in the cloud-draped highlands of Huehuetenango โ Guatemala's most remote and storied coffee region โ this organic medium-light roast is the result of extraordinary care at every elevation. Farms sit between 1,350 and 2,050 meters, where cool mountain air and rich volcanic soil push the Typica, Caturra, and Catuai varieties to their full potential.
What sets this coffee apart is the producer behind it: the Association of Special Coffee Producers of Huehuetenango (ASOPCE). Each family runs their own micro-mill, hand-selecting ripe cherries and controlling every step of the washed process โ depulping, fermentation, and sun-drying โ before delivering parchment to a solar-powered central warehouse. The result is a coffee with the traceability of a single farm and the community depth of a cooperative.
In the cup, Stillwater opens with rich caramel and milk chocolate warmth, then brightens with a clean citrus lift โ think orange zest on a dark chocolate square. The body is smooth and well-balanced, never heavy, with a lingering caramel finish that makes it as satisfying at 6 AM as it is at 3 PM.
