Tasting Notes

Milk Chocolate  ·  Wild Honey  ·  Vanilla

Three Birds is a coffee that wraps you in warmth from the very first sip. Its creamy chocolate body gives way to a gentle sweetness — think wild honey drizzled over vanilla — finishing clean and bright. Comforting enough for a slow morning, complex enough to keep you coming back.

The Story Behind the Cup

Bolivia is South America's only landlocked coffee-producing country, and its Yungas region — meaning "warm lands" in Aymara — is where some of the continent's most underappreciated specialty coffee quietly thrives. Steep, cloud-wrapped mountains and rich tropical soils create ideal conditions for arabica, yet the region's remoteness has long kept it off the radar of the wider coffee world.

At the heart of this region is Caranaví, home to 85–90% of Bolivia's specialty coffee. Here, small family farms cling to rugged hillsides, their isolation both a challenge and a gift — preserving traditional, chemical-free growing methods that have been passed down for generations.

The San Juan Cooperative was founded in 1974 by 40 farmers united around a simple but powerful idea: that small farms, grown organically and supported collectively, could produce extraordinary coffee. Nearly five decades later, that mission holds. San Juan's members continue to cultivate with care, and the results speak for themselves in every bag of Three Birds.
